From a vineyard close to the Pacific, with clay soil. Cluster selection and harvest by hand, co fermentation of both varieties: 50% whole cluster, 50% destemmed, fermentation in stainless steel for 3 weeks, drained and pressed in old 225 liter barrels, 6 months of
